It is school holiday again and kids will be spending more time at home. This also means that we need to prepare more meals. All of us love Japanese food so it is good to start making them at home instead of dinning out frequently.

Karaage Chicken for the kids

Instead of making Sushi and Temaki like we usually do, we made some Tori Karaage (Japanese Fried Chicken) because I have 2 deboned chicken thighs, sitting in my freezer.

Ingredients

2 pieces deboned chicken thighs (cut into small pieces/cubes, so it is easy for kids)

some ginger juice (extract from pounded ginger)

2 tablespoon soy sauce

dash of pepper and sugar (I omit this)

1/2 teaspoon sake (I do not have sake at home, so I used Chinese Wine instead)

few drops sesame oil

Corn starch to coat the chicken

Oil for frying

Method

Best to marinate chicken cubes overnight

To dust with corn flour, place marinated chicken cubes (a little batch at one time) into a plastic bag that contains flour. Reason is so I do not have to use so much flour at one time just in case of wastage

Shake the mixture so that chicken cubes and evenly. Lightly dust off before frying.

Fry on a pan on medium heat (I cut the cubes very small, so they cook real fast)

Serve with salad, some mayonaise and a cut of lemon if you like

**Some tips to share

You might wanna deep-fry twice so that the chicken pieces stay crunchy for longer time. How to do that? Just fry as normal, and after complete frying all the chicken, put it through inside wok and give it a rinse with hot oil.

Instead of using corn flour, another alternative is to use self-raising flour (we use this a lot at home for all our deep fried because its very crunchy!) or potato-starch flour.

Since I am cooking for the kids, I usually have my chicken thighs deboned before steam or frying. We keep and freeze the bones for our soup in future.

Original Karaage Premix -soft type

But if you are lazy to pound and squeeze the ginger extract (which you should not omit because it would makes a big difference), a good option is to get the Soft Karaage Premix. Do take note that there are 2 types of Karaage Premix, and the one I am using is the soft batter type, in original flavour (the sales girl from Shojikiya told me Pasta Zanmai outlet is using the same one).

Do note that the above tips are solely based on my personal experience and this post is written not related to any affiliate marketing.

Ingredients

Mayonaise

Spread some mayonaise, tomato sauce (or chilli sauce if you like) on it

Apply some meat floss all over and roll them up

Cut them before serving

Verdict:

My kids love it and even hubby commented this is good. These egg rolls would look pretty if you serve them in your kids bento. Just add a nice sticker where you can print from inventory labels and it would add a lot color to your bento box

I know a lot of us get extremely worry at times when our child does not eat well. This happens usually to first-time parents. I was the same too, feeding my girl timely on her meal. And at the end of the day, it usually ended up into pointless feeding whereby we made the kid hate their food even more.

With the boys, I am very much more lenient. They eat whenever they want, but if they are not hungry during feeding time, I will put aside their food until they get hungry again. I find that this way, they eat very much better and we are all happier too!

Not being blessed with a fair skin like my peers and both my brothers, I had always wanted to look fair when I was young. I applied lots of baby powder on my face, take an umbrella whenever I go under the sun when I was a teenager. Unfortunately nothing works for me.

When I got pregnant with QQ, my mum advised me to drink the Ensure Milk from Abbott (she even bought it for me). It is highly nutritious and expensive soy milk (even suitable for be used as meal replacement). A tin of 1000g cost about RM55. My mum and her friends who drank this milk during their pregnancy swears by it (true enough my youngest brother is the fairest among us, and with a high nose bone, he look very “ang-mor” too :p)

However not everyone can tolerate milk, what’s more soy taste. Unfortunately I could not even accept the taste when I carried QQ (I am very disheartened each time her friend’s parents in school commented on her “tan” skin).

When I carried the twin boys, I love the taste! (be it vanilla, strawberry or chocolate) I am a milk drinker since young and I drink Ensure milk at least 3 cups a day! That is how both my Bumbo boys are blessed with fair, white and super smooth tofu skin although hubby and I looks tan.

I hardly have a chance to use the bento kits that I bought recently. Although I am not decorating my girl’s food, I am happy that she is now learning to eat some greens. She could take most of the vegetables with soft leaves. Her favourite is the spinach. So from time to time, I will introduce some new vege to her, hoping that she would slowly love vege. Green beans are in fact good for little children. Shall check out some new recipes since my boys are going to start on solid too, soon.

Obviously the babies are drinking sufficient breastmilk!

Just imagine how many nappies we are washing daily now with 2 babies! We even use them to wrap up the babies to keep them tight (so that they will not get frightened easily) and warm. But for the past 2 days, it was raining so heavily that we almost have no nappies to use anymore. Unless we get one of those dryers otherwise we can easily substitude them with the disposable diapers. Really cannot imagine what it is like if I still live in the past where there are no diapers!

Ever since my tummy gets bigger, I can hardly walk for long. So every time, I would have to get my dear friend, Seet to do the marketing for me.

Since hubby is around and my girl got up so early today, we managed to go for a good breakfast and do some light marketing at the market. With the price hike on everything, especially the pork and meat, we bought so much vegetables and fruits since we are eating more vegetables now. Hope my children would love to consume more green in future so that they will not rely on acne solutions like their mum did in her teenage years.
