Siew Pheng (she can cook Chinese Food really well!) from our Tuesday playgroup surprised us with a very special dish last week. She called it Milky Chicken but I guess changed the name to the title above. Cook with quite lots of ginger, this dish is also very suitable for confinement.

Recipe shared by Siew Pheng

Marinade for Chicken

Light soya sauce

White rice wine

Sesame oil

Abalone sauce

Dash of paper

Chicken (I used 3 thighs, deboned)

Pounded Ingredients

Ginger

Shallots

Garlic

2 stalk Lemongrass (serai)

Sesame Oil

Sauce

Salt

1 can Evaporated milk

Dash of sugar

Method

Marinate chicken at least for 1 hour

Blanch in hot oil and leave aside – I skipped this step

Saute pounded (or you can also chopped them finely) ingredients till fragrance

Add in chicken and seasoning to taste

*Update 9/8/2011: Finally I managed to try out this dish. Instead of just mincing the ingredient, I still prefer to pound them (well, that’s what Kakak is for in the kitchen!)

Verdict: The gravy taste heavenly because of the evaporated milk used plus lots of pounded ginger. Although it is a bit spicy, QQ loves this dish. She put a lot of the gravy on her rice while I just scoop the gravy and eat like that. We love it, and certainly will whip up another dish again soon….Yummy!!!!

Confinement is getting more convenient these days. Unlike last time, we know have a choice of hiring a confinement lady to help out cooking and taking care of our babies. If our home is too packed, we can even go to private confinement homes to stay during that month. In fact, we will be provided with a private room where our family can always come to visit us. These confinement home even provides food catering for mums who choose to stay at their home, with ready food sent over. All we have to do is to make a call from our unlocked cell phones and the service will be at our doorstep.

During my previous confinement, the heatiness in my body is so bad that I can hardly continue to eat the ginger and all my confinement food from the second week onwards. My body was so heaty that I had acne all over my face and had to rely on the acne cream to improve my skin. My confinement lady even add some vegetable and fruits into my confinement diet for a better balance. Thank goodness this round, I only feel the heatiness a few weeks after my confinement.

With so much oily and good food from confinement, it is surely difficult to loose weight. Since we only only eating meat and fish for almost a month, one can hardly shed off some weight unless she exercise a lot, or breastfeed her baby. A friend of mine who gave birth to a triplet actually sheds off 5kg in her confinement month, and another 5kg in the subsequent month just by taking care of her 3 babies. If you wanna loose weight fast, take care of triplets like her or read more about the diet pill reviews to find out more about diet pills consumption.

All we eat is ginger and wine. We practically cook everything with it, and even fried rice with ginger!

The whole idea is to heat up our body during confinement but I wonder if we will be overheated. If only the insurance company knows about this practice, they probably would not want to sell us a policy on the NC health insurance!

Since my maid can cook well, she has been doing the cooking day and night. She even cooks my confinement food, of course with supervision from my confinement lady. It is good in a sense that she is picking up good skill on the confinement food preparation. And ever since my confinement lady left, I still get to enjoy the confinement food until now. So all I do is to take care of my babies, feed them, glue myself to my laptop and in front of our new TV. How nice if hubby gets a set of the home theater seating so that I can nurse more comfortably while watching TV!

During my CL stay one month here for my confinement, most of the dishes were cook by my maid. My maid has to do all the housework, washes all the clothes, do all the food cleaning, and luckily she catch up my CL’s cooking skill really fast. I must say that she has got a talent in cooking. Upon reaching here one week, she could almost do all our cooking my style, and now, plus my CL’s confinement cooking skill. If I stop breastfeeding one day and continue eating like that, I think I’ll have to end up have to invest in one of the ellipticals.

Although it cannot be compared to the private hospital, I would say that their place is spacious and very clean. Even most of their nurses are very friendly. With just some small charges daily, we get a good choice of 3 good meals in a day. Only some special patients who wear medical id are required special food have to take very plain diet.

How much do you consume during your confinement month?

Usually I will drink a bowl of soup, with a meat dish (chicken, pork or fish) with a bowl of rice. Many mums who are wishing to slim down has advise against the intake of rice during the confinement month. And true enough, my confinement lady just told me that eating less rice during confinement month can really slim one down more rapidly.

Currently I am only concern about the having not enough milk for my babies. Therefore, I still eat a bowl or rice, hoping that I’ll be able to produce more milk for my babies. Hopefully with breastfeeding, I’ll be able to burn the body fat soon, or with the help of Anoretix, to increase the metabolism in my body.

Due to the c-sect for the delivery, I am not allowed to take any chicken or fish other than pork for the first week. I love confinement food but for the first week, I am only allow to take pork (plus it’s spare parts). Getting a bit bored with them already as I have been eating mee hoon/noodle with ginger pork, lunch with fried pork or ginger pork soup. Luckily I just manage to get the pork vendor send over some spare parts to me so that we can cook pepper ginger pork trotter soup today!

*think I must really run on my treadmill after this confinement, hehe….*
