Cilli paste for steamboat

I love the sourish steamboat cilli paste from a steamboat shop outside my house, but I can’t find any recipe for something similar online. Hence I tried it out myself with ingredients as below:

  • Red Cilli
  • Garlic
  • Sugar and Salt to taste
  • Pounded fresh Ginger sauce
  • White Vinegar

I pounded red cilli and garlic before adding the rest together (estimated the amount according to my taste) before I add some white vinegar to it. Viola, it taste just as good as those we had in steamboat restaurant!

I love spicy food and most of us in the family too, except for hubby and my eldest son. However not everyone can take spicy food as it can create bowel irritation to weak stomach. One with sensitive skin might get serious acne skin by having too much of this. For instant, a friend of mine got acne problem since she loves spicy food, but ended filling a Accutane Lawsuit on her skincare treatment center for prescribing her a wrong kind of acne medication. Really unlucky for her as she just went through the Trasylol lawsuit due to some bypass problem.

Sambal Belacan

I am so into food recently, especially the spicy food. While visiting Miche in Melaka, I asked her to help me get some nice homemade belacan and this is what we have for lunch today, *yummy*!

Ingredients needed:  2 shallots, 6 red chilli, belacan (1/2 thumb size) and 4 limau kasturi (limes), dash of salt

Method

  1. Grill belacan on charcoal / dry fry on hot pan over stove (without oil)
  2. Pound belacan with chilli, shallots
  3. Add a dash of salt
  4. Press lime juice over the sambal

Taste very good with just a hot plate of rice, even better with Ayam Pongteh (Miche is so right about this!)
